       今儿说的是宫廷小吃——奶酪
       咱们的奶酪可不同于老外的。自打这奶酪进入咱老百姓的生活后,有不少家作奶酪生意的字号。可真正地道的那就要说这名震京都的老字号——奶酪魏了,现如今经营这奶酪魏的是魏家的第四代传人了。说到奶酪魏就不得不说说“合碗酪”,很多人认为合碗酪是奶酪魏的一个品种,其实是不对的!“合碗酪”实际是魏家评判奶酪好坏的一个标准!因为魏家的奶酪在制作的选料上乘做工讲究,所以他们家的奶酪在倒过来是合碗而不掉而且“合碗酪”三个字也是客人所赠,但是一直流传至今!这也是魏家奶酪的特色所在。   
      “口感细腻冰凉润喉,这可是当年宫里头的好东西呀…………

  奶酪原为宫廷小吃,光绪14年,奶酪魏第一代传人魏鸿臣有一位在御膳房做事的朋友教会了他这门手艺。后来赢得顾客一片赞誉,人送美名“奶酪魏”。解放前,鲁迅、梁实秋、马连良、谭富英都是奶酪魏的常客。
  制作奶酪必须以鲜牛奶为主料,用自酿的一种米酒点一下,让它凝固,然后放到烤箱里烤一小时左右,最后再放在冰箱中冷却。奶酪魏的绝活儿是制作“合碗酪”,做出来的奶酪把容器倒过来都不洒。“奶酪魏”的奶酪,奶香和着夹杂其中淡淡的酒香非常香醇。第三代传人魏广禄说,这就是他们家传奶酪的最大特点“乳香与米酒香合在一起,香甜醇厚”。

This palace cheese is quite different from the foreign one. Since the palace chesse being a part of the common people's life, several cheese bars has been opened. However, the veritable and the most famous one is the old bar ---- Cheese Wei. It is already the fouth generation to operate this bar until now. When it comes to Cheese Wei, we should mention its "He Wan Cheese". So many people think this is one of the various kinds in Cheese Wei. But it is totally wrong! In fact, "He Wan Cheese" is a standard to value the cheeses' quality in Cheese Wei. And because the materials and the technique to make cheeses are all the best in the shop, the cheeses made in Cheese Wei can even stick on the bowl when the bowl is toppled. The name "He Wan Cheese" is also given by a customer and is still used until now! This is the characteristic of the cheeses in Cheese Wei, too.
"It tasted exquisite and cool as well as moistens your throat. This was indeed a wonderful thing in the palace ......"

    Today we are gonna talk something about snacks in ancient palace----cheese ,which is totally different from these from overseas.Ever since the cheese appears in ordinary people's life, there exist not a few of   trade names on cheese.But among all these cheese brands which truely lives up to its own name should be the Cheese Wei that is of course a house-hold name through out BeiJing .Right now it is already the forth generation who is operating on this business.Now that we have been talking about something about the cheese ,we can not avoid one of the kind, stick-to-bowl cheese,whch is regarded by all as one of Wei's variety,actually it is not but a standard to judge the cheese quality.As when the Wei make cheese, the matials are  so superior and crafts are so fine that the cheese is sticky enough to the bowl not to fall out when the bowl is put upside-down .that is why the customers give it as the cheese's  name ,which is still used till now.It is also one of  the Wei Cheese 's speciality.

    We may also hear people say that :with the smooth mouthtastes and abitity to cool and wet one's whistle, it is definately something really good in ancient palace.

Today our chatting topic is the royal food ---cheese.
Our cheese is different from the foreign .There are many cheese shops have opened since the cheese appeared in our life.But the best one among these shops should be the old shop called Cheese Wei that is famous in Beijing.Running the shop is the fourth generational person in the Wei family now。We can not ignore the “combination cheese”when we chatting about Cheese Wei。Most people will regard the“combination cheese”as a kind of Cheese wei,but this thought is wrong indeed。Actually, “combination cheese” is a standard to value the cheeses' quality in Cheese Wei.
